Universe for me. It is the best mode ever after Season Mode. As the OP said, the fact that it is never ending makes it worth playing.

BoD, there are such character specific cutscenes. But there is no specific activation method, tho.
The cutscenes are
*BoD Kane and Taker chokeslamming two guys and then hitting the Tombstone.
*Lights go out after a match and Taker shows up, then chokeslammes his opponent.
*Eddie Guerrero's chair trick.
*DX run out and hit the Pedigree and Sweet Chin Music.
